Fennel Pickle

The aniseed flavour of this simple to prepare pickle is a perfect accompaniment to serve with smoked salmon. Mix some of the fennel fronds, sliced very finely, with some virgin olive oil, and drizzle the plate with this glorious green oil. Top with ground black pepper and enjoy with a glass of chilled chardonnay.

Method

  1. Sprinkle the fennel slices with the salt and stir to mix. Leave to stand for ½ hour. Rinse well and drain the fennel.
  2. Bring the vinegar, sugar and water to the boil. Cool slightly and pour it over the fennel. Cool down and stir in the fennel fronds. Leave in the refrigerator until needed and serve with smoked salmon.
