Fava Bean Bruschetta
Sweet, tender fava beans make a very good topping for bruschetta. Be sure to drizzle generously with the best extra virgin olive oil.
Method
- Blanch the fava beans in boiling salted water for 1 minute. Drain and immerse in ice water. When cool, slit the skin with a sharp knife and gently squeeze to remove the bright green bean inside.
- Warm 2 tablespoons of olive oil in a small frying pan and sauté the garlic to release its fragrance. Add the fava beans and a bit if water and simmer for 10 minutes until the beans are tender. Season with salt and black pepper. Transfer the beans to a blender and puree until smooth. Taste and adjust the seasoning.
- Brush the bread with olive oil and place on a baking sheet. Toast under the grill until lightly browned on both sides. Spread the fava bean puree onto the warm toasts, drizzle with olive oil and top with Parmesan shavings. Serve at once.
