Durban Roast Chicken
For this meltingly tender roast chicken, the whole bird is skinned, then marinated and roasted in a covered dish. It is irresistibly delicious and easy to prepare.
Method
- Preheat the oven to 180 °C (350 °F). Line a roasting dish with a large piece of foil.
- Place the chicken onto the foil. Mix the lemon juice, ginger, garlic, chillies, salt, cumin, coriander and oil to a paste in a food processor. Rub this paste inside and all over the chicken. Set aside for 1 hour.
- Sprinkle the chicken with chilli powder and black pepper. Cover the chicken with foil and bake for 1 hour. Open the foil and continue to bake the chicken for 15 minutes, basting the chicken with the pan juices. Serve garnished with fresh coriander sprigs.
