Dried Green Bean Salad

I tasted these dried green beans recently at a vegetarian restaurant in Switzerland and just loved the flavour combinations. I’ve adapted the recipe slightly and am very pleased with the dish. I’ve made the salad with fresh green beans as well and although there is a big difference in the appearance, it is equally good.

Method

  1. Bring the beans to the boil in a large pot of salted water. Simmer for 25 minutes. Drain well and set aside.
  2. Sauté the onion in the grape seed oil until soft and translucent. Add the garlic and sauté another minute. Remove from the heat and add the balsamic vinegar.
  3. Combine the green beans with the walnuts and the onion mixture. Toss in the fresh coriander leaves and season to taste.
  4. Serve the salad at room temperature.
