Crispy Chicken Thighs

A quick and easy chicken treat that is excellent served hot with French fries and stir-fried vegetables. Served cold, it is a great addition to a picnic basket.

Method

  1. Preheat oven to 180 °C. Lightly grease an ovenproof dish.
  2. Mix the mayonnaise, spring onion and dill. Season to taste.
  3. Spread the mixture over the chicken thighs and then roll them in the breadcrumbs.
  4. Place in a single layer in an ovenproof dish and spoon the melted butter over.
  5. Bake for 45 minutes. Drain on kitchen paper, and serve immediately garnished with dill sprigs and lemon wedges.
