Crispy Chicken Thighs
A quick and easy chicken treat that is excellent served hot with French fries and stir-fried vegetables. Served cold, it is a great addition to a picnic basket.
Method
- Preheat oven to 180 °C. Lightly grease an ovenproof dish.
- Mix the mayonnaise, spring onion and dill. Season to taste.
- Spread the mixture over the chicken thighs and then roll them in the breadcrumbs.
- Place in a single layer in an ovenproof dish and spoon the melted butter over.
- Bake for 45 minutes. Drain on kitchen paper, and serve immediately garnished with dill sprigs and lemon wedges.
