Corn Pudding

This is a super side dish to serve with grilled lamb or chicken and does very nicely too, served with bacon and grilled tomato, for a easy brunch treat.

Method

  1. Preheat the oven to 180 C (350 F). Butter a 1 liter Pyrex dish.
  2. Toss the corn, pepper, onion, cheeses, flour, mustard powder, salt and sugar.
  3. Whisk the eggs and the cream. Stir into the corn mixture. Spoon into the prepared Pyrex dish and bake for 45 minutes, until golden brown. Serve at once.
