Corn Pudding
This is a super side dish to serve with grilled lamb or chicken and does very nicely too, served with bacon and grilled tomato, for a easy brunch treat.
Method
- Preheat the oven to 180 C (350 F). Butter a 1 liter Pyrex dish.
- Toss the corn, pepper, onion, cheeses, flour, mustard powder, salt and sugar.
- Whisk the eggs and the cream. Stir into the corn mixture. Spoon into the prepared Pyrex dish and bake for 45 minutes, until golden brown. Serve at once.
