Coconut Rice

The best rice I’ve ever tasted.

Method

  1. Soak rice in water for 15 minutes. Drain and rinse.
  2. Heat coconut milk and water to boiling point and add salt, ginger, lemon juice and rice.
  3. Simmer over slow heat until rice is cooked.
  4. Add the spring onions and serve immediately.
