Cinnamon Roast Chicken
For this recipe you need chicken supremes. It is the drumstick and thigh left in one piece. Allow one supreme for each person.
Method
- Preheat oven to 180 ºC (350 ºF). Grease a roasting pan.
- Sprinkle the chicken with the turmeric and cinnamon. Brush the butter over the chicken and season with salt and pepper. Place the chicken, skin-side uppermost, in the roasting pan.
- Roast the chicken for 20 minutes. Spoon the honey over the chicken and bake for 20 minutes more until the chicken is cooked through.
- Place the chicken on a serving platter, scatter with coriander leaves and garnish with lemon wedges. Serve with couscous and a mixed salad.
