Cinnamon Roast Chicken

For this recipe you need chicken supremes. It is the drumstick and thigh left in one piece. Allow one supreme for each person.

Method

  1. Preheat oven to 180 ºC (350 ºF). Grease a roasting pan.
  2. Sprinkle the chicken with the turmeric and cinnamon. Brush the butter over the chicken and season with salt and pepper. Place the chicken, skin-side uppermost, in the roasting pan.
  3. Roast the chicken for 20 minutes. Spoon the honey over the chicken and bake for 20 minutes more until the chicken is cooked through.
  4. Place the chicken on a serving platter, scatter with coriander leaves and garnish with lemon wedges. Serve with couscous and a mixed salad.
