Christmas Biscotti
These glace fruit biscotti are very festive and delicious served with a glass of dessert wine.
Method
- Preheat the oven to 180 °C. Grease a 25 x 8 cm cake tin.
- Beat the egg whites until soft peaks with the salt. Gradually beat in the caster sugar beating very well until the sugar is dissolved.
- Fold is the cake flour, walnuts and glace fruit.
- Spread into the prepared tin.
- Bake in the oven for 30 to 35 minutes until just firm. Cool for a few minutes and then carefully turn out onto a wire rack. Allow to cool down completely. Wrap in aluminium foil and put aside for a day or two. Using a very sharp knife carefully cut the biscotti into thin fingers. Place the fingers on a baking tray and dry in the oven at 60 °C until very dry and crisp. Store in a cake tin.
