Christmas Biscotti

These glace fruit biscotti are very festive and delicious served with a glass of dessert wine.

Method

  1. Preheat the oven to 180 °C. Grease a 25 x 8 cm cake tin.
  2. Beat the egg whites until soft peaks with the salt. Gradually beat in the caster sugar beating very well until the sugar is dissolved.
  3. Fold is the cake flour, walnuts and glace fruit.
  4. Spread into the prepared tin.
  5. Bake in the oven for 30 to 35 minutes until just firm. Cool for a few minutes and then carefully turn out onto a wire rack. Allow to cool down completely. Wrap in aluminium foil and put aside for a day or two. Using a very sharp knife carefully cut the biscotti into thin fingers. Place the fingers on a baking tray and dry in the oven at 60 °C until very dry and crisp. Store in a cake tin.
