Celery with Peas
In this recipe celery in braised with onions and potatoes and then finished with fresh dill and a squeeze of lemon juice.
Method
- Blanch the celery in boiling water to which the lemon juice has been added. Drain and rinse under cold water.
- Heat the oil in a saucepan and add the onions. Cook until translucent. Add the potatoes and celery together with 1 ½ cups water. Simmer for 20 minutes until the potatoes are tender.
- Add the frozen peas and heat through. Add the sugar and dill and correct the seasoning. Serve at once.
