Carrots and Peas with Sweet Italian Sausage

Serve these carrots as a side dish with a roast dinner. It can be prepared in advance and heated in the microwave oven just before serving.

Method

  1. Cook the carrots in salted water for 10 minutes. Drain and set aside.
  2. Heat the oil in a frying pan and add the onion. Cook until softened. Add the sausage meat and cook over medium heat, breaking up the sausage meat with a wooden spoon, about 6 minutes.
  3. Add the carrots, peas and diluted tomato paste. Season with sugar, salt and pepper and cook for 2 minutes.
  4. Remove from the heat and transfer to a serving dish. Scatter with the parsley just before serving.
