Carrots and Peas with Sweet Italian Sausage
Serve these carrots as a side dish with a roast dinner. It can be prepared in advance and heated in the microwave oven just before serving.
Method
- Cook the carrots in salted water for 10 minutes. Drain and set aside.
- Heat the oil in a frying pan and add the onion. Cook until softened. Add the sausage meat and cook over medium heat, breaking up the sausage meat with a wooden spoon, about 6 minutes.
- Add the carrots, peas and diluted tomato paste. Season with sugar, salt and pepper and cook for 2 minutes.
- Remove from the heat and transfer to a serving dish. Scatter with the parsley just before serving.
