Caramelized Onions and Figs

Caramelized onions liven up so many different dishes. Think of that delicious goat cheese Panini with a generous dollop of caramelized onion, or the rare roast beef sandwich. Adding fresh figs to the onions, adds a lovely sweetness and it is a very nice accompaniment to grilled salmon.

Method

  1. Heat the olive oil in a saucepan and add the onions. Sprinkle with a bit of salt. Cook covered over low heat for around 10 minutes until the onions are soft. Remove the cover and continue to cook, stirring often, until the onions are golden brown.
  2. Stir in the rest of the ingredients and simmer until the onions and figs have formed a thick sauce. Season to taste with salt and freshly ground black pepper. Serve warm with grilled salmon and keep the leftovers in the refrigerator. These caramelized onions are great with cheese, cold meats – what ever you fancy.
