Bruschetta Ala Broccoli Rape
Broccoli rape sautéed with onion and bacon piled on grilled bruschetta are delicious tit bits to serve as a starter. If you can’t find broccoli rape, substitute with Swiss chard or spinach leaves
Method
- Rinse the broccoli rape leaves well and blanch them in boiling salted water for 3 minutes. Drain the broccoli rape, reserving some of the water, and rinse under cold running water.
- Sauté the onion and garlic in 3 tablespoons of olive oil until soft and translucent. Add the bacon and sauté until cooked.
- Squeeze the water from the broccoli rape and chop coarsely. Add to the onion and bacon mixture and sauté for a few minutes until heated through. Add some of the reserved blanching water so that the mixture is “juicy” and season to taste with salt and freshly ground black pepper.
- Meanwhile, brush the bread slices with olive oil and place under the grill until nicely toasted on both sides.
- Pile the sautéed broccoli rape onto the bread and serve at once.
