Broccoli with Pine Nuts and Raisins

I am always interested in vegetable side dish preparation to present all time favourites in a different style. I am sure you will enjoy this dish as much as we do.

Method

  1. Soak the raisins in the lemon juice and set aside.
  2. Blanch the broccoli in boiling, salted water and refresh under cold running water. Drain and set aside.
  3. When ready to serve, brown the pine nuts in the butter and oil in a large frying pan. Remove with a slotted spoon and set aside. Add the broccoli to the frying pan and stir fry until piping hot. Season to taste with a pinch of nutmeg, salt and ground black pepper. Stir in the raisins and lemon juice and sprinkle with the pine nuts. Serve at once.
