Broccoli with Pine Nuts and Raisins
I am always interested in vegetable side dish preparation to present all time favourites in a different style. I am sure you will enjoy this dish as much as we do.
Method
- Soak the raisins in the lemon juice and set aside.
- Blanch the broccoli in boiling, salted water and refresh under cold running water. Drain and set aside.
- When ready to serve, brown the pine nuts in the butter and oil in a large frying pan. Remove with a slotted spoon and set aside. Add the broccoli to the frying pan and stir fry until piping hot. Season to taste with a pinch of nutmeg, salt and ground black pepper. Stir in the raisins and lemon juice and sprinkle with the pine nuts. Serve at once.
