Broccoli and Mushroom Salad

This colourful salad delights the eye and tastes simply delicious. Serve at room temperature with ham or roast chicken.

Method

  1. Marinate the mushrooms. Place the sliced mushrooms in a container. Whisk all the marinade ingredients together and pour over the mushrooms. Refrigerate for at least 6 hours.
  2. Cook the broccoli in salted water for 3 minutes. Drain and refresh under cold water. Place broccoli on a clean tea towel and allow it to dry.
  3. Place broccoli and tomatoes in a salad bowl. Spoon mushrooms and marinade over, toss and serve immediately.
