Broccoli and Mushroom Salad
This colourful salad delights the eye and tastes simply delicious. Serve at room temperature with ham or roast chicken.
Method
- Marinate the mushrooms. Place the sliced mushrooms in a container. Whisk all the marinade ingredients together and pour over the mushrooms. Refrigerate for at least 6 hours.
- Cook the broccoli in salted water for 3 minutes. Drain and refresh under cold water. Place broccoli on a clean tea towel and allow it to dry.
- Place broccoli and tomatoes in a salad bowl. Spoon mushrooms and marinade over, toss and serve immediately.
