Braised Aubergine with Coriander

These braised aubergines are delicious served with grilled fish.

Method

  1. Wash the aubergines and cut off the stalks. Cut the aubergines into thumb size batons.
  2. Heat the oil in a large saucepan . Add the aubergines and fry over high heat for 2 minutes. Add the garlic, chili and soy sauce. Lower the heat, cover the saucepan, and braise the aubergines for 5 minutes. Correct the seasoning. Serve, garnished with the coriander leaves and a drizzle of sesame oil.
