Braised Aubergine with Coriander
These braised aubergines are delicious served with grilled fish.
Method
- Wash the aubergines and cut off the stalks. Cut the aubergines into thumb size batons.
- Heat the oil in a large saucepan . Add the aubergines and fry over high heat for 2 minutes. Add the garlic, chili and soy sauce. Lower the heat, cover the saucepan, and braise the aubergines for 5 minutes. Correct the seasoning. Serve, garnished with the coriander leaves and a drizzle of sesame oil.
