Black Garlic Butter

Black garlic is fermented aged white garlic that is now available in leading South African supermarkets. I first encountered this delicacy in San Francisco a couple of years ago where it was served simply sautéed in butter and tossed with linguini. Black garlic does not have the pungent smell and taste of fresh garlic and adds a boost of umami to the dish. I will be trying out many ways of using this great product.

Method

  1. Process all the ingredients in the bowl of your mixer or food processor and beat until creamy. Spoon into a butter bowl and serve with freshly baked bread or melt onto a perfectly cooked steak.
  2. Store covered in the refrigerator.
