Baked Potatoes and Onions
Potatoes and onions baked this way are delicious. Serve with a white sauce and avocado salad for a vegetarian meal or with yesterdays BBQ Short Rib.
Method
- Preheat oven to 180 ºC (350 ºC). Grease an ovenproof baking tray.
- Cut potatoes into 6 to 8 wedges.
- Cut onions into quarters.
- Mix the potatoes and onions with oil, coriander, paprika, vinegar and salt and pepper. Bake in oven tray for 30 minutes.
- Remove dish from the oven, add the herbs and toss the potatoes and onions. Return baking tray to the oven and bake for 30 to 40 minutes until the potatoes are cooked. Garnish with fresh herbs and serve immediately.
