Asian Style Crisp Vegetable Salad

Serve this light, fresh and crunchy salad as a side dish.

Method

  1. Place the snow peas, carrots, peppers and bean sprouts in boiling water for 1 minute. Drain and refresh under cold running water.
  2. Make the dressing. Whisk all the ingredients together and season with salt and pepper.
  3. Place vegetables in a salad bowl and add the dressing and spring onions. Toss well and serve at once.
