Artichoke Sauce for Pasta

An impressive but easily made vegetable sauce with the flavour of Italy, this is a good one to serve with pasta.

Method

  1. Drain the artichoke hearts, rinse under a cold tap and cut into quarters.
  2. Heat the butter and olive oil in a frying pan over gentle heat and cook the onion until soft but not browned. Add the garlic and cook for 1 minute.
  3. Add the artichokes and sauté for 2 minutes.
  4. Add tomatoes, sugar and thyme. Simmer for 10 minutes to thicken the sauce. Season to taste with salt and pepper.
  5. Spoon the sauce over freshly cooked pasta of your choice and serve immediately.
