Artichoke Sauce for Pasta
An impressive but easily made vegetable sauce with the flavour of Italy, this is a good one to serve with pasta.
Method
- Drain the artichoke hearts, rinse under a cold tap and cut into quarters.
- Heat the butter and olive oil in a frying pan over gentle heat and cook the onion until soft but not browned. Add the garlic and cook for 1 minute.
- Add the artichokes and sauté for 2 minutes.
- Add tomatoes, sugar and thyme. Simmer for 10 minutes to thicken the sauce. Season to taste with salt and pepper.
- Spoon the sauce over freshly cooked pasta of your choice and serve immediately.
