Artichoke and Tomato Pasta Sauce
This is a delicious and very convenient sauce to serve over cooked pasta. Pass around freshly grated Parmesan cheese.
Method
- Heat the oil in a saucepan and add the onion and garlic. Sauté for 6 minutes over low heat. Add the chopped artichoke hearts and simmer for 4 minutes.
- Raise the heat and add the tomatoes, chili, white wine and sugar. Simmer for 10 minutes while cooking the pasta.
- Add the fresh basil and Parmesan cheese to the sauce and season to taste with salt and ground black pepper. Drain the pasta and toss with the sauce. Serve at once with extra parmesan cheese.
