Almond Butter Crinkles
With all the nut butters now the rage I tried substituting almond butter for peanut butter in an old favourite peanut butter cookie recipe. It is a huge success and very good with that morning cup of tea.
Method
- Preheat the oven to 180 ºC. Grease a baking sheet.
- Cream the butter, vanilla, sugars and almond butter. Work the sifted flour, baking soda and salt into the butter mixture with a wooden spoon to form a stiff dough.
- Roll heaped teaspoons of dough into small balls with floured hands. Place onto the greased baking sheets making sure there is space between the balls for the cookies to expand. Crinkle the balls by pressing down lightly with a fork, first crosswise and then length wise.
- Bake in the oven for 15 minutes until nicely golden. Cool on the baking sheet.
- Store in a sealed container.
